This evening I’ve done a Fight Club class (my favourite exercise class!) and I’m now prepping dinner for tomorrow. It’s diced pork loin with mixed vegetables, cooked with garlic and 5 spice seasoning - I will chuck it together with some noodles tomorrow. My kids love this meal because they can all find their favourite veggies in it (and usually they pass their least favourites onto me!). I put brussels in too, because they cook beautifully like this and end up with a tasty glaze on from the pork. I have asparagus & baby corn to add tomorrow....I find they become limp if they’re prepped and stored the night before. This will feed all five of us...with an extra helping for Hubby! Nom! 😀
