So with a little time on my hands this morning I decided to make one of my faves. Banana oat pancakes. 100g of porridge oats 2 large eggs 150ml milk (I used almond milk) 1 large banana mashed Whisk all together in a bowl. Then spoon into a pan like you would normal pancake batter. It's a lot thicker than normal pancake mix and I have found you need a lower heat. Be patient or they will fall apart when you flip them. Serve with your choice of topping. This morning I'm treating myself to marshmallows, squirty cream and peanut butter. You can make breakfast muffins with the same mixture. Just leave it in the fridge for a few hours then spoon into a muffin tray and bake at 180 degrees for about 20 mins.
